The goodness of hummus

Hummus lovers, this one is for you. According to Ayurveda, the combination of ingredients in (freshly made) hummus is a surprisingly balanced dish. Some background: Ayurveda talks about 6 tastes - sweet, sour, salty, pungent, bitter and astringent (dry) - which are needed in every meal to balance it out and help the digestive system work like it should. And hummus has them all! Let's break it down. Chickpeas are astringent, bitter and sweet (not as in sugar sweet but it has a sweet effect when it's digested). Tehina is sweet, and it's oiliness and heaviness balances out the lightness and dryness of the chickpeas. Paprika adds some pungency. Lemon gives it sourness and bitterness, as does fresh parsley if sprinkled on top. Add some salt and you're done. Abu Gosh anyone?
